Chocolate Mint Cream Cookies

It's funny - I originally started this blog to keep track of my cookbook usage and favorite recipes, and possibly also to justify my occasional purchases of more cookbooks. But these days - and a huge part of this has been my involvement in Tuesdays with Dorie - I get most of my great ideas from fellow food bloggers. No, I won't be giving away the books anytime soon. But I could probably cook something new every day just from the TWD blogroll alone.

Case in point: last night's spontaneous Christmas cookie project. I spotted the following recipe on HoneyB's blog, The Life and Loves of Grumpy's Honeybunch. The recipe comes from the Better Homes and Gardens Cookies for Christmas book (still in print, and going on my wish list).

I knew I was going to make them, lack of pastel mint creams notwithstanding. (I'm still not sure what those are, though maybe a trip down the supermarket candy aisle would jog my memory.) I did have a bag of Hershey's Mint Truffle Kisses (like an Andes mint, in Kiss form). The cookie is incredibly simple and tasty; depending on the candy you melt on top, you could do the sort-of-green version I did, add colored sugar on top, whatever you want.
