I recently bought a small bottle of eggnog extract from King Arthur Flour, so I substituted that for the vanilla. We decided to go with a simple tree cut-out and decorate with pearl sugar and colored sugars. The cookies were just a touch soft and flavorful (the eggnog did not overwhelm, fortunately). To avoid overbrowning, I had to bake them about 9 minutes per batch, and I think I got about 20 4" trees.
We really liked these, and I would definitely make them again, but in terms of ease of rolling out, I think my No-Fail Sugar Cookie recipe from Fancy Flours still wins. Please visit the Tuesdays with Dorie page for our fabulous bakers' blogroll and for the snazzy new Christmas look.

eggnog extract...sounds great! good job!
Eggnog extract, hmmm?? Sounds interesting. Although the dough was a little temperamental, I did enjoy these. Great job.
Oh, I haven't seen the eggnog extract! What a cool idea.
eggnog extract?? wow! that sounds delicious. glad you liked these. the pearl sugar is so pretty.
Yum! Great idea to use eggnog extract! I can't believe someone else mentioned Fancy Flours in their blog post this week! I'll have to check out their sugar cookie recipe.
Eggnog extract -- that sounds so festive! Your cookies are beautiful! I agree that these weren't the easiest in the world as cut out cookies. Tasty, though! I think I'll probably use this particular recipe for slice and bake cookies going forward, and I might just try the one you linked for cut outs!
I'm going to have to check out the eggnog extract! I had my first eggnog latte at Starbucks yesterday and loved it!
Great job on the cookies!
Egg nogg, we say Advocaat in German is a must for these days.
Your cookies look very nice. Thanks for baking with TWD and me this week.

eggnog extract?! i never even knew there was such a thing! probably a good thing, since i love eggnog and would be putting it into every baked good i made :)
your cookies are lovely. i love the colored sugars--gives it a beautiful sparkle!
I've never heard of eggnog extract either, but I'm quite intrigued now! Your cookies look terrific, the decorations are lovely. :)
Ooh that extract sounds good. I liked these, too, but agree that my usual recipe is better.
I looked at that eggnog extract.
Was it good?
What else would you use it for?
What a novelty: eggnog extract! Hummm... I must always be the last one to know about those tings! LOL
Nervetheless, the trees look great, but I must admit having a thing for multicolored sprinkles (or usualy, mostly pink ones! LOL).
Very nice, Jess!
eggnog extract sounds interesting! I love you Christmas tree shapes
Eggnog extract? Where would someone acquire such an excellent product? I love eggnog, but it's like 9 million calories for a cup, so I try not to drink it. Extract would be a far more practical (and less fattening) approach.
yumm--eggnog extract! what a lovely twist for your cute trees:)
Oh, I so love the neat little extracts KAF has - eggnog wouldn't be my first choice, but I'm sure it was tasty. Thetrees look wonderful.
wonderful idea to use the eggnog extract (which i didn't even know existed!) - i love your christmas tree cookies. adorable!
Oh man, egg nog in cookies?! Are you serious!? You've just combined my two favorite things in the world!
Egg nog extract?! Can you please have a scratch and sniff on your blog?! :) That sounds perfect. Your cookies look great!
