Mortensen Family Memoirs picked Caramel Pumpkin Pie for this week's Tuesdays with Dorie, and I really wanted to try it. But.
Well, to be truthful, I just didn't want to make a pie. But I did want the pie filling - canned pumpkin with a intense boost from homemade caramel, spices, and rum. So I carefully swirled my sugar in a pan (fear of caramel conquered!), baked the custard filling in ramekins, and called it a day. Oh my. The caramel was not the unctuously sweet caramel I was expecting - this is smokier, much more sophisticated.
I think I'll be making this again - as pie - for Thanksgiving next month. I'll also cut out half the rum, which I usually do in any Dorie recipe specifying dark rum, but forgot to do this time. No wonder my five-year-old had had enough after two spoonfuls. Thanks, Janell - I'm so glad I got to taste test this one before the holidays!
