Flip open a random page of the Sunset Cookbook - any page. You'll be sure to see something you want to make. This is more or less how I happened upon this recipe for Chicken Tagine with Pine-Nut Couscous. The Sunset Cookbook is my new kitchen bible - and if you've ever glanced through a copy of Sunset magazine, you know why. Every Westerner has their favorite Sunset recipes tucked inside a family recipe box, and I'm no exception (persimmon cake, anyone?). It's hard to find a persimmon in my neck of the woods, however, so I'm off in search of new Sunset favorites.
I was looking for something new to do with chicken thighs, and cooking them with Moroccan-influenced spices and dried fruit just sounded perfect for a blustery March evening. You brown some chicken thighs (the recipe specifies bone-in, but I used boneless) with onions, garlic, ginger, and half the contents of your spice rack, then cook for 40 minutes with chicken broth and halved prunes and apricots. Now, I don't want to hear any groaning over prunes. They melt into the sauce and give it a rich sweetness, which, combined with the flavorful but not overwhelming spices, makes this a very kid-friendly pick. Make some 5-minute couscous and you're done.
Is it authentic? I have no idea. Is it easy and good? Absolutely. You can find the recipe here on Sunset's recipe website, myrecipes.

I used to love shopping there when I was working in upstate NY. It was a super nice grocery store. Hope yours is, too!

ReplyDeleteI love prunes :) if you like this recipe you should try the lamb tagine in dorie's "around my french table" - it's delicious! can be made in a skillet or dutch oven if you don't have a tagine.
