TWD: Maple Cornmeal Biscuits

Hot off the presses! Or out of the oven, as it were. I made the Maple Cornmeal Biscuits for breakfast this very morning. Lindsay from A Little Something… Sweet picked this week's Tuesdays with Dorie recipe, and you can find the recipe on her blog. (I love that if you check the actual web address of Lindsay's blog, it says "marthaiaint.")

Although we're nearing the end of our Baking: From My Home to Yours journey, isn't it amazing that we keep finding little gems of recipes? This biscuit certainly falls into that category. They were so fast and idiot-proof (not to mention delicious and satisfying) that I am tempted to do this early morning baking thing more often.

On a rainy spring morning, what could be more wholesome and comforting than stoneground cornmeal and maple syrup, tossed together with buttermilk (I had some on hand) and a judicious amount of butter? These biscuits felt vaguely pioneerish, like I had just hauled my sack of cornmeal out of the wagon and made them over a campfire. Unlike my Cornmeal Shortbread Cookies of a few weeks ago, the coarsely ground cornmeal really shone, giving the biscuits a pleasant texture (and no risk to my dental work). The maple syrup added just a hint of sweetness; the biscuits could work either as a breakfast treat or on the dinner table. I might have skipped past this recipe in the book, but I'm so glad I made them.

  7. I can't believe we're almost at the end of the book - so hard to believe! I actually made these but probably won't get around to posting them. I'm not much of a biscuit person but it seems these were loved by just about everyone else! Glad they were a hit there.
