Just to get things out of the way, there is no picture of my Brown Sugar Bundt Cake, because once again, I found myself chowing down on the last bite of my miniature bundt cake before realizing that I had forgotten to take a picture. Peggy from Pantry Revisited chose this deceptively simple but flavorful cake for today's episode of Tuesdays with Dorie. You can find the recipe on her blog.
In just four weeks, our local pool opens, so with bathing suit season on the horizon I have been miniaturizing everything in sight. I made one small bundt (one-third recipe) with dried apricots and chopped apples. It was absolutely fantastic, although I think I might substitute dark brown sugar next time to get a real punch of brown sugar flavor. Breakfast? Morning snack? Afternoon snack? Dessert? It fits the bill. Thanks, Peggy - I love giving my bundt pans a workout, and this recipe was well worth the effort.

ReplyDeleteThis sounds delicious. You have great control to make only one mini cake - I would have made the three and justified it by saying it was easier than dividing the recipe into thirds. That way it is likely you would have remembered to take a photo before the last one was gone! Thanks for sharing.
